Chicken drumsticks with Roasted Vegetables

Ingredients:

  • 7 chicken drumsticks
  • 2 tablespoons tomato puree
  • 3 tablespoons olive oil
  • Ground black pepper, to taste
  • Salt, to taste
  • Curry, to taste
  • Thyme, to taste
  • 50 ml (1/4 cup) hot water
  • 3 potatoes, peeled and chopped
  • 2 carrots, peeled and chopped
  • 1 red onion, chopped
  • 1 bell pepper, chopped
  • 5 cloves garlic, minced
  • 150 ml (2/3 cup) hot water

Method of Preparation:

Step 1: Marinate the Chicken

  1. Marinate: In a bowl, mix 2 tablespoons of tomato puree, 3 tablespoons of olive oil, ground black pepper, salt, curry, and thyme. Coat the chicken drumsticks in this mixture and let them marinate for 1 hour.

Step 2: Prepare the Vegetables

  1. Chop Vegetables: Peel and chop the potatoes and carrots. Chop the red onion and bell pepper. Mince the garlic cloves.
  2. Combine: Mix the chopped vegetables and minced garlic together.

Step 3: Assemble and Bake

  1. Preheat Oven: Preheat your oven to 180°C (350°F).
  2. Arrange in Roasting Pan: Place the marinated chicken drumsticks and mixed vegetables in a roasting pan. Add 150 ml (2/3 cup) of hot water and salt.
  3. Initial Bake: Cover the roasting pan with foil and bake in the preheated oven for approximately 50 minutes.
  4. Final Bake: Remove the foil and bake for an additional 15 minutes, or until the chicken is golden brown and cooked through.

Chicken drumsticks in Tomato Sauce

Ingredients:

  • 8 chicken drumsticks
  • 100 ml (1/2 cup) tomato sauce
  • 500 ml (2 cups) water
  • 1 teaspoon thyme
  • 1 teaspoon basil
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 3 cloves garlic, minced
  • 2 tablespoons plain flour
  • 400 ml (1 2/3 cups) tomato puree
  • 100 ml (1/2 cup) white wine
  • Parsley, chopped (for garnish)

Method of Preparation:

Step 1: Prepare the Sauce Base

  1. Sauté Vegetables: In a large pan, heat some oil over medium heat. Add the chopped onion, peeled and chopped carrots, and minced garlic. Sauté until the vegetables are tender and the onion is translucent.
  2. Add Flour and Tomato Puree: Sprinkle in 2 tablespoons of plain flour and stir well. Add 400 ml of tomato puree and mix until combined.

Step 2: Combine with Chicken

  1. Add Chicken: Add the chicken drumsticks to the pan and mix well to coat them with the tomato mixture.
  2. Add Liquid and Seasonings: Pour in 500 ml of water, 100 ml of tomato sauce, and 100 ml of white wine. Season with salt, pepper, thyme, and basil. Stir to combine.

Step 3: Cook the Chicken

  1. Boil and Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened slightly.
  2. Garnish: Before serving, sprinkle with chopped parsley for a fresh touch.
