Chicken Fettuccine Alfredo Recipe – Easy Dinner

Ingredients

  • 2 lbs chicken breast
  • 3/4 lbs fettuccine pasta (or angel hair or vermicelli pasta)
  • 1 lb white mushrooms, thickly sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 3 1/2 cups half and half*
  • 1/4 cup parsley, finely chopped, plus more for garnish
  • 1 tsp sea salt (or to taste), plus more for pasta water
  • 1/4 tsp black pepper (or to taste)
  • 3 Tbsp olive oil, divided
  • 1 Tbsp butter

Instructions

Step 1: Cook the Pasta

  1. Cook the fettuccini in a pot of salted water (4 quarts water, 1 Tbsp salt) according to package instructions. Drain and set aside.

Step 2: Prepare the Chicken

  1. Slice the chicken into strips and season all over with salt and pepper.
  2. In a large skillet, heat 2 Tbsp olive oil over medium/high heat. Sauté the chicken until lightly golden and cooked through, about 5 minutes. Remove chicken from the pan and cover to keep warm.

Step 3: Cook the Vegetables

  1. In the same pan, over medium/high heat, add 1 Tbsp olive oil and 1 Tbsp butter. Add the finely chopped onion and sauté for 3 minutes until soft.
  2. Add the sliced mushrooms and sauté until soft, about 5-7 minutes, stirring frequently. Add the minced garlic and sauté for 30 seconds, stirring constantly.

Step 4: Make the Alfredo Sauce

  1. Add the half and half to the pan and simmer over medium/high heat for 8-10 minutes, or until it begins to thicken.
  2. Add the cooked chicken back to the pan. Add 1/4 cup finely chopped parsley and season the sauce to taste with 1/2 to 1 tsp salt and 1/4 tsp black pepper.

Step 5: Combine and Serve

  1. Add the cooked pasta to the pan and stir to combine. Heat for another minute until warmed through, then turn off the heat.
  2. Cover and let the dish rest for 10-15 minutes to allow the flavors to meld. Stir before serving.
  3. Serve garnished with additional parsley.

Notes

  • *To substitute half and half, use equal parts of milk and heavy cream. If you prefer a thicker, creamier sauce, you can use heavy whipping cream instead.
