  • 4 potatoes
  • 2 eggs
  • 1 spring onion
  • Vegetable oil
  • Salt
  • Black pepper


  1. Prepare the Potatoes:
    • Grate the 4 potatoes and place them in a bowl.
    • Season with half a teaspoon of salt and mix well.
    • Squeeze the excess liquid from the grated potatoes.
  2. Initial Frying:
    • Heat a drizzle of vegetable oil in a pan over low heat.
    • Add the grated potatoes and fry for 2-3 minutes, stirring occasionally.
  3. Add Eggs and Onion:
    • Beat the 2 eggs in a separate bowl.
    • Chop the spring onion finely.
    • Add the beaten eggs and chopped spring onion to the pan with the potatoes. Mix well to combine.
  4. Cook the Pancake:
    • Cover the pan with a lid and cook the mixture over medium heat for 10 minutes.
    • Carefully turn the pancake over using a plate or a spatula.
    • Cook for another 8 minutes over low heat, this time without the lid, until both sides are crispy and golden brown.
  5. Serve:
    • Once cooked, transfer the potato pancake to a serving plate.
    • Slice and serve hot, seasoned with salt and black pepper to taste.
