CRISPY Swiss Fried Potatoes in a Frying Pan

Ingredients

  • 1.2 lbs potatoes
  • 1 teaspoon salt
  • 2 tablespoons butter or vegetable oil (pre-melted)
  • 2 tablespoons ghee (or vegetable oil)
  • Thyme, mushrooms, cheese, sour cream – to your taste

Instructions

  1. Prepare the Potatoes:
    • Grate the potato tubers on a coarse grater and place them in cold water. Rinse for three minutes.
    • Squeeze the potatoes and place them on a napkin to absorb moisture.
    • Transfer the squeezed potatoes into a container.
  2. Season and Mix:
    • Add salt and sprinkle with thyme or other herbs of your choice.
    • Optionally, add ½ finely chopped onion.
    • Pour the pre-melted butter or vegetable oil into the potatoes. Mix well.
  3. Cook the Potatoes:
    • Heat a frying pan with oil.
    • Place the potato mixture in the pan, spreading it evenly and pressing down without stirring.
    • Cook over moderate flame for 5 minutes.
    • Slightly move the potatoes away from the sides of the pan.
  4. Prepare the Mushrooms:
    • Finely chop the onion and champignons (mushrooms).
    • In another frying pan, fry the onion, then add the champignons and continue frying until the water evaporates.
    • Season with salt and pepper, then fry for another 2 minutes. Remove from heat.
  5. Flip and Finish:
    • After 5 minutes, when the potatoes are sufficiently cooked, reduce the flame and quickly turn the potato cake over using a flat plate.
    • Fry the potatoes on the other side on low heat for about 4 minutes. Add more oil if necessary.
    • Once the inverted potato cake is cooked and crispy, it is ready to serve.
