History of Cheesecake

Cheesecake has a rich history dating back to ancient Greece, where it was served to athletes during the first Olympic Games. The Romans later adopted and spread the recipe across Europe. Over centuries, cheesecake evolved into various forms, with the classic New York-style cheesecake emerging as a favorite in the United States. Our version brings a refreshing twist with the addition of lemon and raspberry, creating a dessert that’s both timeless and modern.

Ingredients

  • 1 1/2 cups graham cracker crumbs (about 150 grams)
  • 1/4 cup granulated sugar (50 grams)
  • 1/2 cup unsalted butter, melted (113 grams)
  • 3 packages (8 oz each) cream cheese, softened (680 grams total)
  • 1 cup granulated sugar (200 grams)
  • 3 large eggs
  • 1 cup sour cream (240 ml)
  • 1/4 cup lemon juice (60 ml)
  • 1 tablespoon lemon zest (6 grams)
  • 1 teaspoon vanilla extract (5 ml)
  • 1/2 cup raspberry preserves (160 grams)
  • Lemon slices and fresh raspberries, for garnish
  • Crystallized sugar, for garnish

Instructions

Preparing the Crust

  1. Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan to prevent sticking.
  2. Combine Ingredients: In a medium bowl, mix together the graham cracker crumbs, 1/4 cup of granulated sugar, and the melted butter until the mixture resembles wet sand.
  3. Form the Crust: Press the crumb mixture firmly into the bottom of the prepared springform pan, creating an even layer. Use the back of a spoon or the bottom of a glass to press the crumbs down tightly.

Making the Cheesecake Filling

  1. Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese and 1 cup of granulated sugar with an electric mixer until smooth and creamy. This process should take about 2-3 minutes to ensure there are no lumps.
  2. Add Eggs: Add the eggs one at a time, beating well after each addition. This helps to incorporate air and create a smooth batter.
  3. Incorporate Sour Cream and Flavors: Mix in the sour cream, lemon juice, lemon zest, and vanilla extract. Continue beating until all ingredients are well combined and the mixture is smooth.

Assembling the Cheesecake

  1. Pour the Batter: Pour the cheesecake batter over the prepared crust in the springform pan, spreading it evenly with a spatula.
  2. Add Raspberry Swirl: Drop spoonfuls of raspberry preserves onto the surface of the cheesecake batter. Use a knife to gently swirl the preserves into the batter, creating a marbled effect.

Baking the Cheesecake

  1. Bake: Place the cheesecake in the preheated oven and bake for 55-60 minutes, or until the center is almost set. The cheesecake should have a slight jiggle in the center when you gently shake the pan.
  2. Cool: Remove the cheesecake from the oven and let it cool on a wire rack for 10 minutes. Run a knife around the edge of the pan to loosen the cheesecake, which will help prevent cracks as it cools.
  3. Chill: Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours, preferably overnight, to let the flavors meld and the texture set.

Garnishing and Serving

  1. Garnish: Before serving, garnish the cheesecake with fresh lemon slices and raspberries. For an extra touch of elegance, sprinkle a bit of crystallized sugar on top.
  2. Serve: Slice the cheesecake with a sharp knife, wiping the blade clean between cuts to ensure clean slices. Serve chilled and enjoy the burst of lemon and raspberry flavors in every bite.
