- Preheat your oven to 350°F (175°C) and either line a muffin tin with paper liners or grease it.
- In a large bowl, mix together the Greek yogurt, eggs, honey, oil, and vanilla extract until smooth.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the diced apples.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes in the tin before transferring them to a wire rack.
