Greek Yogurt Apple Muffins

Instructions

  1. Preheat your oven to 350°F (175°C) and either line a muffin tin with paper liners or grease it.
  2. In a large bowl, mix together the Greek yogurt, eggs, honey, oil, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the diced apples.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool for a few minutes in the tin before transferring them to a wire rack.
