Grilled Lemon Herb Salmon with Quinoa Salad

For the Salmon:

  • 4 salmon fillets
  • 2 lemons (one for slices, one for juice)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

For the Quinoa Salad:

  • 1 cup quinoa, rinsed
  • 2 cups water or low-sodium chicken broth
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste


Prepare the Salmon:

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together 2 tablespoons olive oil, 3 cloves minced garlic, juice from one lemon, 1 tablespoon fresh parsley, 1 tablespoon fresh dill, salt, and pepper.
  3. Place the salmon fillets on a plate and brush both sides with the lemon herb mixture. Place lemon slices on top of each fillet.

Prepare the Salad:

  1. In a large bowl, combine the cooked quinoa, 1 diced cucumber, 1 diced red bell pepper, 1/4 cup finely chopped red onion, and 1/4 cup fresh parsley.
  2. In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon red wine vinegar, salt, and pepper.
  3. Pour the dressing over the quinoa salad and toss to combine. Sprinkle with 1/4 cup crumbled feta cheese.


Plate the grilled salmon alongside the quinoa salad. Garnish with additional fresh herbs and lemon wedges if desired.
