Ingredients
- 1 1/4 cups dates
- 1 1/3 cups peanuts
- 3.5 oz white chocolate (or dark chocolate if preferred)
Optional Garnish
- Sesame seeds
- Dark chocolate
Instructions
Step 1: Prepare the Peanuts
- Place 1 1/3 cups of peanuts in a food processor.
- Grind until they become crumbly.
Step 2: Prepare the Dates
- Wash the dates well, remove the pits, and add them to the food processor with the ground peanuts.
- Grind until the mixture is well combined and forms a sticky, cohesive mass.
Step 3: Form the Mixture
- Transfer the mixture into a bowl.
- Using your hands, squeeze the mixture together to form one solid block.
Step 4: Roll and Coat
- Take a portion of the block and place it on a flat work surface.
- Roll the portion into a log shape. If desired, sprinkle sesame seeds on the surface and coat the roll.
- Repeat the process with the remaining mixture.
- Place the rolls on a baking tray lined with parchment paper.
Step 5: Create Wells
- Using the end of a wooden spoon, make a well in the middle of each roll.
- Set the rolls aside.
Step 6: Melt the Chocolate
- Place the white chocolate in a heatproof bowl.
- Set the bowl over a pot of boiling water and stir until the chocolate is melted (alternatively, you can melt the chocolate in the microwave).
- Repeat the process for the dark chocolate if using it for garnish.
Step 7: Fill and Decorate
- Once melted, let the white chocolate cool slightly and transfer it to a piping bag.
- Fill the wells in the rolls with white chocolate.
- If desired, use a separate piping bag to decorate with melted dark chocolate.
Step 8: Chill and Cut
- Let the filled and decorated rolls chill for about 5 minutes to set.
- Once set, cut the rolls into bite-sized pieces. To cut easily, heat a knife in hot water and dry it before slicing.
