Poke Bowl Recipe

Make this easy and delicious fresh Poke Bowl with soy-marinated tuna, fresh vegetables, and rice yourself! Highly recommended for a healthy and flavorful meal.

Ingredients

Main Ingredients

  • 7 oz (200 g) sushi rice
  • 3 tablespoons sushi vinegar
  • 7 oz (200 g) raw tuna, cubed
  • 3.5 oz (100 g) soybeans
  • 3.5 oz (100 g) seaweed salad (wakame)
  • 1 mango, cubed
  • 1.8 oz (50 g) carrot, julienne
  • Couple of slices of radish

Tuna Marinade / Dressing

  • 1 clove garlic, sliced
  • 4 tablespoons soy sauce
  • 3 tablespoons mirin (Japanese rice wine)
  • 1 lime
  • Chili flakes (to taste)
  • 3 tablespoons honey or agave
  • 2 tablespoons sesame oil

Garnish

  • Black and white sesame seeds
  • Lime slice

Preparation

Step 1: Make the Marinade

Cut the garlic clove into 2 pieces. Mix all the ingredients for the marinade, except the sesame seeds and lime juice, together in a pan. Let it simmer for about 15 to 20 minutes on low heat. Then remove the marinade from the heat and let it cool. Add the lime juice to the sauce once it’s cooled.

Step 2: Cook the Sushi Rice

Cook the sushi rice according to the package instructions. Once cooked, keep the lid on and carefully add the sushi vinegar. Let it sit for another 15 minutes to allow the flavors to meld.

Step 3: Marinate the Tuna

Add about 1 to 2 tablespoons of the cooled marinade to the cubed tuna. Let it sit for a while to absorb the flavors. The remaining marinade will be used as a dressing.

Step 4: Assemble the Poke Bowl

Scoop the rice into the center of a bowl. Arrange the marinated tuna, soybeans, seaweed salad, cubed mango, julienned carrot, and radish slices in a circle around the rice. Drizzle with the remaining marinade dressing.

Step 5: Garnish

Garnish the poke bowl with black and white sesame seeds and a lime slice.

Tips

  • You can make sushi vinegar by dissolving 2 teaspoons of sugar and a pinch of salt in 3 tablespoons of rice vinegar.
  • Use the freshest tuna you can find since you will be eating it raw.
  • If you can’t find soybeans, substitute with avocado or cucumber.
