Ingredients
- 3 ½ tablespoons olive oil
- 2 zucchinis
- 1 onion
- 2 tablespoons butter
- 1 carrot
- 10.5 ounces mushrooms
- 1 tomato
- 1 tablespoon flour
- 1 ⅔ cups cream
- 1 bunch parsley
- 3.5 ounces hard cheese
- Salt, to taste
- Black pepper, to taste
- ½ teaspoon nutmeg
- 10.5 ounces boiled rice
Instructions
- Fry the Zucchini:
- Heat the olive oil in a pan.
- Cut the zucchinis into pieces and fry them in the pan for 4-6 minutes.
- Prepare the Onions:
- Finely chop the onion and fry it in another pan with the butter for about 4 minutes.
- Add the Carrots:
- Slice the peeled carrot and add it to the pan with the zucchini. Mix well.
- Cook the Mushrooms:
- Cut the mushrooms into small pieces and add them to the pan with the onions. Fry for 3-5 minutes.
- Add the Tomatoes:
- Wash the tomato, remove the hard part and seeds, then cut it into pieces.
- Mix the tomato pieces with the zucchini and carrots.
- Make the Cream Sauce:
- Dust the mushroom and onion mixture with a tablespoon of flour. Mix well.
- Add the cream to the mixture, stir, and cook for 5 minutes on a low flame.
- Season with salt, black pepper, and nutmeg.
- Combine and Bake:
- Chop the washed parsley, removing the stems.
- Combine the zucchini mixture with the mushroom mixture and chopped parsley. Mix well.
- Transfer the mixture to a baking dish and sprinkle with finely grated hard cheese.
- Bake in a preheated oven at 180°C (350°F) for 10 minutes.
- Serve:
- Serve the baked zucchini with boiled rice, decorated with chopped parsley.
