A Simple Recipe for a Delicious Vegetable Casserole! Quick and Easy

Ingredients

Vegetable Part:

  • 2 large potatoes
  • 1 carrot
  • 1 small cauliflower
  • 1 small broccoli
  • 1 tablespoon of salt

Other:

  • Olive oil – for frying and greasing the baking dish
  • 1 green onion
  • 1 orange sweet pepper
  • 5.3 oz (150 g) of cheese

Mixture:

  • 3 eggs
  • 5 tablespoons of olive oil
  • 1 2/3 cups (400 ml) of milk
  • Ground black pepper (to taste)
  • 1 teaspoon of salt
  • 1 cup (130 g) of flour
  • Herbs and spices (to taste)

Dressing:

  • 2 tablespoons Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 clove of garlic
  • Pickled cucumbers (to taste)
  • Fresh dill (to taste)

Instructions

  1. Cook the Vegetables:
    • Cut the potatoes into rounds and the carrot into small rounds.
    • Separate the cauliflower and broccoli into small florets.
    • Boil these vegetables in a pot of water seasoned with 1 tablespoon of salt for 2-3 minutes on low heat.
    • Drain the vegetables and set aside, keeping the potatoes separate.
  2. Prepare the Green Onion:
    • Finely chop the green onion.
    • Heat a bit of olive oil in a pan and fry the green onion on low heat for 5-7 minutes.
  3. Assemble the Casserole:
    • Preheat your oven to 350°F (180°C).
    • Grease a baking dish with olive oil.
    • Place the boiled potato rounds in the baking dish as the base layer.
    • Spread the other cooked vegetables on top of the potatoes.
    • Add the fried green onions and sliced orange sweet pepper.
  4. Prepare the Mixture:
    • In a separate bowl, beat the eggs.
    • Gradually add 5 tablespoons of olive oil while continuing to beat.
    • Add half of the milk and the flour, and beat until smooth.
    • Add the remaining milk, ground black pepper, salt, and any desired herbs and spices. Mix well.
    • Pour the mixture over the vegetables in the baking dish.
    • Sprinkle grated cheese on top.
  5. Bake the Casserole:
    • Bake in the preheated oven for 50 minutes, or until the top is golden brown and the casserole is set.
  6. Prepare the Dressing:
    • In a small bowl, mix together Greek yogurt, mayonnaise, pressed garlic, grated pickles, and chopped fresh dill.
  7. Serve:
    • Serve the baked vegetable casserole hot, with the prepared yogurt dressing on the side.
