- Prepare the Baking Pan
- Grease the baking pan with butter on all sides, all the way around.
- Layer the Onions
- Cut the onion into large crescents and place them on the greased pan. Season with salt and pepper to taste.
- Add the Potatoes
- Cut the potatoes into rounds and place them on top of the onions in the pan. Season the potatoes with salt, pepper, and drizzle with olive oil.
- Prepare the Chicken
- Cut the chicken breast into pieces. Season with salt, pepper, and sprinkle with ground red pepper, then place on top of the potatoes in the pan.
- Make the Sauce
- Break the eggs into a bowl, add herbes de Provence, nutmeg, salt, and heavy cream. Mix well with a whisk. Pour the sauce over the ingredients in the pan and cover with aluminum foil.
- Bake
- Bake in a preheated oven at 190°C (374°F) for 1 hour.
