Dough:

  • 500 grams or 4 cups of bread flour or all-purpose flour
  • 160 ml or 2/3 cup of warm milk
  • 160 ml or 2/3 cup of warm water
  • 10 grams or 1½ tbsp of instant dry yeast
  • 10 grams or 1 tbsp of sugar
  • 8 grams or ¾ tbsp of salt
  • 18 grams or 3 tbsp of olive oil

Topping (optional):

  • Melted unsalted butter or olive oil
  • Crushed red pepper
  • Chopped parsley

Directions

Step 1: Prepare the Dough

  1. In a mixing bowl, combine 160 ml warm milk, 160 ml warm water, 10 grams of instant dry yeast, and 10 grams of sugar. Stir until the yeast dissolves.
  2. Add 500 grams of flour and 8 grams of salt to the yeast mixture. Mix until well combined.
  3. Knead the dough with your hands until it becomes smooth. Add 18 grams of olive oil and continue to knead until the dough is smooth and elastic.
  4. Transfer the dough to a large mixing bowl, add more olive oil to coat, and cover with plastic wrap. Let it rise in a warm place for about 1 hour or until it doubles in size.

Step 2: Shape the Dough

  1. After an hour, punch down the dough to release the gas. Remove it from the bowl and smooth it out.
  2. Divide the dough into 6 even pieces and shape each piece into a smooth ball.
  3. Cover the dough balls with plastic wrap to prevent drying.
  4. Take one dough ball, sprinkle some flour on it, and flatten it with a rolling pin until it’s about 7 inches (18 cm) in diameter and 5 mm thick.

Step 3: Grill the Flatbread

  1. Heat a skillet over medium heat and add a bit of oil.
  2. Place one flatbread dough into the hot skillet. When bubbles form on the top, flip it over.
  3. Cook until the bread turns golden yellow and starts to swell. Reduce the heat to low and flip once more to ensure both sides are evenly cooked.
  4. Transfer the cooked flatbread to a plate and cover it with a cloth to keep it soft.
  5. Repeat with the remaining dough balls.

Optional Topping:

  1. Brush the flatbreads with melted butter or olive oil.
  2. Sprinkle with crushed red pepper and chopped parsley.
