  • 2 ½ cups flour
  • A pinch of salt
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla sugar
  • 7 tablespoons (½ cup + 2 tablespoons) butter, cold
  • ¾ cup sour cream
  • 1 egg yolk


  • 1 ⅔ cups nuts (your choice of walnuts, pecans, etc.)
  • 1 egg white
  • 2 tablespoons sugar
  • 5 tablespoons powdered sugar


Step 1: Prepare the Dough

  1. In a large mixing bowl, combine the flour, salt, vanilla sugar, and baking powder.
  2. Add the cold butter to the dry mixture and use a pastry cutter or your fingers to create a crumbly texture.
  3. Add the sour cream and egg yolk to the mixture. Knead quickly with your hands until an elastic, non-sticky dough forms.
  4. Wrap the dough in cellophane and refrigerate for 15 minutes.

Step 2: Prepare the Filling

  1. Grind the nuts in a blender until they are finely chopped.
  2. In a separate bowl, beat the egg white with the 2 tablespoons of sugar until it forms stiff peaks.
  3. Gently fold the chopped nuts into the egg white mixture to create a thick filling.

Step 3: Assemble the Nut Rolls

  1. Preheat your oven to 180°C (350°F).
  2. Divide the dough into 4 equal parts.
  3. Roll each part into a thin circle and cut it into 8 triangles.
  4. Place a small amount of filling at the thick end of each triangle and roll it up towards the point.
  5. Place the rolls on a baking sheet lined with parchment paper.

Step 4: Bake and Coat

  1. Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown.
  2. After baking, place 3-4 rolls in a cellophane bag with powdered sugar and shake gently to coat.
