Ingredients

For the Dish:

  • 1.1 lbs (1/2 kilo) of cabbage
  • 1/2 onion
  • 2 tablespoons olive oil
  • 3 eggs
  • Salt to taste
  • Ground black pepper to taste
  • Chopped oregano to taste
  • Bread crumbs

For the Sauce:

  • 1 bunch of chopped chives
  • 1 clove garlic
  • 2 plain, unsweetened yogurts
  • Salt to taste

Preparation

  1. Prepare the Cabbage:
    • Grate the cabbage finely and place it in a bowl.
    • Let the grated cabbage stand for 15-20 minutes to release excess moisture.
    • Finely chop the onion.
  2. Cook the Onion and Cabbage:
    • Heat the olive oil in a pan over medium-high heat.
    • Cook the chopped onion until golden brown.
    • Drain the cabbage and add it to the pan with the cooked onion.
    • Season with ground black pepper, ground cumin, and oregano. Mix well.
    • Taste the mixture and add more salt if necessary.
  3. Prepare the Patties:
    • Add the eggs to the cabbage mixture and mix well to combine.
    • Form the mixture into balls, then flatten them to form patties.
    • Coat the patties in bread crumbs.
    • Place the patties in the fridge to rest for 15-30 minutes.
  4. Cook the Patties:
    • Fry the patties in hot oil over low heat until they are golden brown on both sides.
    • Remove the patties from the oil and place them on absorbent paper to drain excess oil.
  5. Prepare the Sauce:
    • Finely chop the chives and crush the garlic using a garlic press.
    • In a bowl, mix the chives, garlic, plain yogurts, and salt to taste.
  6. Serve:
    • Serve the hot cabbage patties with the yogurt sauce on the side.
