Zucchini Soup Recipe

Delicious homemade zucchini soup with a touch of mint and cream. This soup can be made easily in just 20 minutes, making it a perfect choice for a quick and satisfying meal.

Ingredients

  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 2 zucchinis, cubed
  • 1 vegetable stock cube
  • 3 sprigs of fresh mint, chopped
  • 4.2 fl oz (125 ml) whipped cream
  • 27 fl oz (800 ml) water
  • Salt (to taste)
  • Pepper (to taste)
  • Dash of olive oil

Preparation

Step 1: Sauté the Onions and Garlic

Heat the olive oil in a soup pan over medium heat. Add the chopped onion and fry until translucent, about 5 minutes. Add the minced garlic and fry for another 2 minutes on low heat, being careful not to burn the garlic.

Step 2: Cook the Zucchini

Add the cubed zucchini to the pan and sauté for a few more minutes until they start to soften. Add the water and the stock cube, stirring until the stock cube is fully dissolved. Bring the mixture to a boil.

Step 3: Add Mint and Simmer

Tear the mint leaves from their sprigs and chop them finely. Add the mint to the pan with the zucchini. Reduce the heat and let the zucchini boil for about 8 minutes, until they are tender and easy to puree.

Step 4: Puree the Soup

Turn off the heat and use a hand blender to puree the soup until smooth. Stir in the whipped cream until fully incorporated. Taste and adjust the seasoning with extra salt and pepper if needed.

Step 5: Heat and Serve

Reheat the soup for another minute if necessary. Serve hot, garnished with a sprig of fresh mint and some extra zucchini cubes for added texture and visual appeal.
