Crispy Potato Tacos! Make This Cheesy Potato Dinner Without an Oven!

Ingredients

  • 2 medium-sized potatoes
  • 1 teaspoon salt
  • 1 medium onion (diced)
  • 1 red pepper (chopped)
  • 7 tortilla breads
  • 7 oz shredded mozzarella cheese
  • Tomato pizza sauce
  • 2 teaspoons butter
  • 2 to 3 tablespoons cooking oil
  • 1/2 tablespoon paprika
  • 1/4 tablespoon black pepper
  • 2 pinches salt
  • 2 tablespoons water
  • 2 tablespoons parmesan
  • Fresh or dried parsley (optional)

How To Make Crispy Potato Tacos

Step 1: Prepare the Potatoes

  • Peel and chop the potatoes, then place them in a pot filled with water and 1 teaspoon of salt.
  • Boil until fork-tender, then drain and transfer to a bowl.
  • Mash the potatoes and mix in 2 tablespoons of parmesan cheese.

Step 2: Cook the Vegetables

  • Add 2 teaspoons of butter or 1 teaspoon of olive oil to a pan over medium heat.
  • Once melted, add the diced onion and chopped red pepper.
  • Cover and cook over low heat for 3 minutes.

Step 3: Season the Vegetables

  • Season with paprika, black pepper, and 2 pinches of salt.
  • Add 2 tablespoons of water, cover, and cook for another 5 to 7 minutes.

Step 4: Combine the Filling

  • Add the cooked vegetables to the mashed potatoes.
  • Mix until well combined.

Step 5: Prepare the Tacos

  • In a separate bowl, mix the tomato sauce and shredded mozzarella cheese.
  • Take one tortilla and spread a layer of tomato sauce on one side.
  • Add a layer of shredded mozzarella cheese, then a layer of the potato mixture.
  • Add another layer of shredded mozzarella cheese, then fold the tortilla.
  • Repeat with the remaining tortillas.

Step 6: Fry the Tacos

  • Add 2 to 3 tablespoons of vegetable oil to a pan over medium heat.
  • Fry the folded tortillas until they are golden brown and crisp on both sides.
  • Top with fresh or dried parsley, if desired.
