Ingredients
- 2 medium-sized potatoes
- 1 teaspoon salt
- 1 medium onion (diced)
- 1 red pepper (chopped)
- 7 tortilla breads
- 7 oz shredded mozzarella cheese
- Tomato pizza sauce
- 2 teaspoons butter
- 2 to 3 tablespoons cooking oil
- 1/2 tablespoon paprika
- 1/4 tablespoon black pepper
- 2 pinches salt
- 2 tablespoons water
- 2 tablespoons parmesan
- Fresh or dried parsley (optional)
How To Make Crispy Potato Tacos
Step 1: Prepare the Potatoes
- Peel and chop the potatoes, then place them in a pot filled with water and 1 teaspoon of salt.
- Boil until fork-tender, then drain and transfer to a bowl.
- Mash the potatoes and mix in 2 tablespoons of parmesan cheese.
Step 2: Cook the Vegetables
- Add 2 teaspoons of butter or 1 teaspoon of olive oil to a pan over medium heat.
- Once melted, add the diced onion and chopped red pepper.
- Cover and cook over low heat for 3 minutes.
Step 3: Season the Vegetables
- Season with paprika, black pepper, and 2 pinches of salt.
- Add 2 tablespoons of water, cover, and cook for another 5 to 7 minutes.
Step 4: Combine the Filling
- Add the cooked vegetables to the mashed potatoes.
- Mix until well combined.
Step 5: Prepare the Tacos
- In a separate bowl, mix the tomato sauce and shredded mozzarella cheese.
- Take one tortilla and spread a layer of tomato sauce on one side.
- Add a layer of shredded mozzarella cheese, then a layer of the potato mixture.
- Add another layer of shredded mozzarella cheese, then fold the tortilla.
- Repeat with the remaining tortillas.
Step 6: Fry the Tacos
- Add 2 to 3 tablespoons of vegetable oil to a pan over medium heat.
