How to Make Jambalaya

Ingredients:

  • 2 chicken breasts (cut into small pieces)
  • 1/2 pound shrimp (washed, peeled, and deveined)
  • 4 medium hot dogs or sausages

For the Veggies:

  • 1 small onion (chopped)
  • 3 garlic cloves (minced)
  • 4 tomatoes
  • 1 hot chili pepper
  • 1 small red bell pepper
  • 1/2 cup tomato paste
  • 5 spring onions

For the Other Ingredients:

  • 3 1/2 cups raw long grain rice
  • 2 cups chicken stock
  • 2 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon thyme
  • 1 tablespoon spice mix
  • 1 chicken seasoning cube

Instructions:

  1. Prepare the Spice Mix:
    • In a medium bowl, combine all the spice ingredients. Add 1 teaspoon of the spice mix to the chicken and mix well. Next, add 1 teaspoon to the shrimp and mix until well coated.
  2. Blend the Tomatoes and Chili:
    • In a food processor, add sliced tomatoes and the hot chili pepper. Blend until smooth.
  3. Cook the Meats:
    • Heat oil in a pan and cook the seasoned chicken pieces until browned. Remove and set aside.
    • In the same pan, fry the sausages until browned, then remove and set aside.
    • Cook the seasoned shrimp until pink and set aside.
  4. Prepare the Veggies:
    • Add more oil to the pan if needed, then add the chopped onion and minced garlic. Fry until softened.
    • Add the tomato paste and cook for a few minutes.
    • Stir in the blended tomato mixture, remaining spice mix, thyme, chicken bouillon, chopped red bell pepper, washed rice, chicken stock, water, and salt. Mix well and cover with a lid. Cook on low heat for 30 minutes.
  5. Combine and Finish:
    • After 30 minutes, remove the lid and add the cooked shrimp, sausages, and chicken to the rice. Mix everything until well combined.
  6. Serve:
    • Serve the jambalaya warm and enjoy!
