Ingredients
- 4 tablespoons wheat flour
- 4 tablespoons corn flour
- 6.6 pounds pike perch
- 2-3 tomatoes
- Hot pepper, to taste
- Sweet pepper, to taste
- 4-5 cloves garlic
- 2 teaspoons Bavarian mustard
- 2 teaspoons smoked paprika
- Salt and pepper, to taste
- 1 ounce (about 1 cup) dill and cilantro combined
- 2 tablespoons vegetable oil
Preparation
- Prepare the Fish:
- Remove the tail and head of the pike perch.
- Make cuts along the length of the fish and divide it into parts, removing the spine.
- Transfer the fish pieces to a bowl, add salt, mix, and let sit for 30 minutes.
- Prepare the Sauce:
- Cut the tomatoes in half and grate them, discarding the peel.
- Chop the sweet and hot peppers into small pieces.
- Finely chop the garlic.
- Use a chopper to blend the vegetables.
- Combine the blended vegetables with the grated tomatoes and finely chopped dill.
- Add salt, pepper, and two teaspoons of Bavarian mustard. Mix well.
- Prepare the Coating for the Fish:
- On a flat saucer, combine wheat flour, corn flour, and smoked paprika.
- Pour water into another plate.
- Fry the Fish:
- Heat 30 milliliters of vegetable oil in a frying pan.
- Dip the fish pieces first in the flour mixture, then in water.
- Fry the fish on each side for about 5 minutes until golden brown.
- Transfer the fried fish to a paper towel to drain excess oil.
- Serve:
- Serve the fried fish with the prepared sauce.
- Enjoy the dish as a festive dinner.
