How to Prepare Zucchini So Tasty, It Rivals Your Favorite Meats

Ingredients

  • 2 zucchinis
  • 1 tablespoon salt
  • 2 eggs
  • ⅓ cup flour
  • ⅓ cup cheese
  • 2 cloves garlic
  • 2 tablespoons sour cream
  • 1 tomato
  • 1 cucumber
  • 70 ml oil (for frying)

Preparation

  1. Prepare the Zucchini:
    • Use a fork to make indentations on the skin of the zucchinis by running the tines along the vegetables.
    • Cut the zucchinis into thin lengthwise slices.
    • Transfer the slices to a deep container, sprinkle with salt, and let them sit for 10 minutes.
  2. Prepare the Cheese Mixture:
    • Grate the cheese using a coarse grater.
    • Pass the garlic through a press and add it to the cheese.
    • If desired, finely chop dill and parsley and mix them with the cheese.
    • Add sour cream to the cheese and garlic mixture and mix thoroughly.
  3. Prepare the Zucchini Slices:

    • Place flour in a separate flat plate.

    • Cut the tomato and cucumber into small cubes.
  6. Assemble the Rolls:
    • Place a spoonful of the cheese mixture on each fried zucchini slice.
    • Add a few cubes of tomato and cucumber on one edge.
    • Roll the zucchini slice around the filling to create a roll.
