Ingredients:

For the Kofta Mixture:

  • 1 cup red lentils
  • 0.7 ounces garlic (minced)
  • 0.4 ounces fresh parsley and cilantro (chopped)
  • Olive oil, for frying
  • 1 onion (5.3 ounces, grated)
  • 1 large potato (10.6 ounces, grated)
  • Pinch of olive oil, for frying
  • 2.5 ounces carrots (grated)
  • 1 teaspoon dried cumin
  • 1 teaspoon dried coriander
  • 1 teaspoon salt
  • 1 teaspoon chili flakes
  • 1/2 teaspoon ground black pepper

For the Creamy White Dressing:

  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup mayonnaise
  • 0.2 ounces minced garlic
  • Salt, to taste
  • Black pepper, to taste
  • Lemon juice, to taste

For the Mildly Spicy Dressing:

  • 2 tablespoons chili powder
  • 2 tablespoons chili flakes
  • 1/4 cup vinegar
  • Salt, to taste

Preparation:

  1. Soak the Lentils:
    • Soak 1 cup of red lentils in water for 30 minutes or longer. Drain and set aside.
  2. Prepare the Vegetables:
    • Heat a pan with a pinch of olive oil. Add grated onion, potato, and carrot. Stir and fry for 10 minutes over medium heat. After frying, let it cool.
  3. Blend the Lentils:
    • In a food processor, roughly blend the soaked lentils, garlic cloves, and fresh parsley with cilantro.
  4. Mix the Ingredients:
    • Combine the lentil mixture with the cooled fried vegetables. Season with dried cumin, dried coriander, salt, chili flakes, and ground black pepper. Mix well and refrigerate for 30 minutes.
  5. Prepare the Creamy White Dressing:
    • In a bowl, mix sour cream (or Greek yogurt), mayonnaise, minced garlic, and season with salt, black pepper, and lemon juice. Mix well and refrigerate.
  6. Prepare the Mildly Spicy Dressing:
    • In another bowl, mix chili powder with chili flakes, add vinegar, and season with salt. Mix well and refrigerate.
  7. Shape and Fry the Kofta:
    • Wet your hands with water and shape small patties from the lentil mixture. Heat oil in a pan and fry the patties on each side until golden and crispy.
  8. Serve:
    • Serve the crispy red lentil vegetable kofta on a tortilla with vegetables, drizzled with the creamy white and mildly spicy dressings, and roll them up. Alternatively, serve them with your favorite side dish and the dressings on the side.
