Ingredients
- 3-4 boiled eggs
- 2-3 boiled potatoes
- 2 cucumbers
- Salt, to taste
- 2-3 sprigs of green onion
- 3-4 tablespoons yogurt
- 1 teaspoon mustard
- Fresh parsley, to taste
Method of Preparation
- Prepare the Cucumbers:
- Wash and peel the cucumbers.
- Cut them into rounds and place them in a large bowl.
- Add a little salt, stir, and let them soften for 10 minutes.
- Once they release their juice, drain the water by squeezing the cucumbers with your hands and place them in a separate container.
- Prepare the Eggs:
- Peel the boiled eggs and cut them into cubes.
- Add the eggs to the container with the cucumbers.
- Prepare the Vegetables:
- Wash and finely chop the green onion.
- Clean and chop the fresh parsley.
- Add both to the bowl with the cucumbers and eggs.
- Prepare the Potatoes:
- Peel and dice the boiled potatoes.
- Add the potatoes to the bowl with the other ingredients.
- Make the Dressing:
- In a small bowl, mix the yogurt with the mustard until well combined.
- Pour the dressing over the salad and mix well.
- Season with salt to taste and mix again.
- Serve:
- Transfer the salad to a serving dish and serve immediately.
